CONSTITUTION: In this production, a muscular tissue of a cold-blooded or warm- blooded animal, which is mechanically sliced and from which bones are pulled out or removed, preferably that of a fish subjected to interim storage, is treated with an extrinsic protease derived from an animal, plant or microorganism source to subject the tissue to restricted partial protein decomposition. Then, albumen protein, if necessary, polysaccharides, lipid and a protease inhibitor, a structural fixation agent and a softening agent are added to the partial decomposition product and thereafter, the resulting material is subjected to suitable freeze-structuralization to produce the objective anisotropic structural body having textural characteristics. At this time, as the protease, that capable of acting in a region of acidic pH to alkaline pH can appropriately be used.
