摘要 Process for the preparation of foodstuffs, such as particularly milk products, meat products, sourdough and the like, by ripening, in which pure or mixed cultures of common microorganisms having a ripening action on the foodstuffs in question are cultured on a suitable nutrient medium by a method known per se, the cultured microorganisms are subjected to selective cell disruption under mild conditions, and, following cell disruption, the product obtained containing the activated enzyme complexes is added directly to the foodstuff to be prepared.
