摘要 PURPOSE:To provide cuttlefish vinegared rice permitting wide repertories, integrated into a food and not causing the separation of the vinegared rice from the cuttlefish by filling a mixture of the vinegared rice and shellfish meats in the body cavity of the cuttlefish in an adhered state. CONSTITUTION:A vinegared rice mixture comprising vinegared rice and shellfish meats is filled in the body cavity of a raw cuttlefish and subsequently steamed to shrink the cuttlefish and simultaneously swell the vinegared rice mixture, thereby giving an adhered state between the cuttlefish and the vinegared rice mixture. The skin of the cuttlefish having the vinegared rice mixture therein in an integrated state is peeled and subjected to a surface treatment to provide the objective cuttlefish vinegared rice. The prepared cuttlefish vinegared rice has an integrated touch, has a highly beautiful cutting surface and can be readily eaten without the separation of the vinegared rice mixture from the cuttlefish body. Since various shellfish meats can be used as the shellfish meats to be mixed with the vinegared rice, the cuttlefish vinegared rice permits wide repertories.
