PURPOSE:To prepare a yeast extract having a reduced yeast odor and a strong taste by subjecting a yeast cell slurry to a hydrostatic pressure treatment comprising specific pressure, treating time and temperature. CONSTITUTION:A slurry containing 5-30% of yeast cells (e.g. beer yeast cells) is treated to a hydrostatic pressure treatment comprising a pressure of 1000-3000 kgf/cm<2>, preferably 3000-5000kgf/cm<2>, a treating time of >=1min and a treating temperature of >=30 deg.C, thereby permitting to provide a yeast extract having the above-mentioned characteristics. The further re-heating treatment of the product after the above-mentioned hydrostatic pressure treatment brings good results on the smell and taste of the product as well as the increase of the extraction rate of the product. The re-heating treatment is preferably carried out at 60-140 deg.C for 1 second to 30 minutes. |
