PURPOSE:To obtain readily drinkable cervi cornu SAKE (Japanese rice wine), having tonic, hypotensive, fatigue recovering action, etc., by extracting cervi cornu with an ethyl alcohol-containing extracting liquid, mixing the resultant extract solution with a raw material SAKE (Japanese rice wine), such as SAKE or 'SHOCHU' (low-class distilled spirit with a high content of alcohol), and aging the resultant mixture. CONSTITUTION:A young horn newly growing in spring every year is cut from red deer or Formosan deer, treated with hot water and dried to produce cervi cornu, which is then dipped in an ethyl alcohol-containing extracting liquid to afford a cervi cornu extract solution. The resultant extract solution is subsequently mixed with a raw material SAKE, such as SAKE or 'SHOCHU', and aged for a prescribed time to afford cervi cornu SAKE. Thereby, odor and taste unique to the cervi cornu are moderated by action of the SAKEs, such as SAKE, to make the SAKE readily drinkable. An extract solution of a medicinal herb, such as Zizyphi Inermi Fructus, can be added thereto in a charging step and aged to more rapidly mature the odor of the cervi cornu. Thereby, the cervi cornu SAKE of mellow flavor can be produced. |
