The invention is concerned with a process for the production of lactic acid bacteria cultures, in which a specific expanded, cereal adsorbent is used as growth medium. The supported lactic acid bacteria are also part of the invention. The concentrate obtained in the above-mentioned process can be used to obtain a composition containing flavour and/or aroma that is very useful in baking operations. |
