PURPOSE:To obtain a food having acid taste and enhanced and long-lasting flavor, by ading palatinose to a food having acid taste. CONSTITUTION:Platinose is added to a food containing sour acid such as citric acid, lactic acid, malic acid, acetic acid, carbonic acid, etc., in an amount 0.7- 2.5 times the amount of sugar usually added to the food. The food is, e.g. refreshing drink, pickles, SUSHI (vinegared fish and rice), mayonnaise, fruit juice, etc. The food has enhanced flavor not only immediately after the preparation but also after the storage for several months. The palationse-containing food is effective also as a food having low cariogenicity. |
