摘要 PURPOSE:To inexpensively obtain a large amount of extract not containing chlorophyll from bamboo grasses by preparing an ethanol aqueous solution of an extracted solution of active component of cellulose of bamboo grasses hydrolyzed with an enzyme, concentrating and drying the aqueous solution under a specific condition. CONSTITUTION:Cellulose of bamboo grasses is hydrolyzed with an enzyme to give an active ingredient, which is extracted with ethanol. Then the extracted solution is mixed with water to give 20-80vol.% ethanol aqueous solution and chlorophyll is reprecipitated and removed by filtration. The prepared aqueous solution containing the active ingredient is distilled at <=40 deg.C under <=55mmHg by a distillation column in an atmosphere replaced with nitrogen or another insert gas while always feeding a small amount of atmosphere from the bottom of the distillation column and the active ingredient is concentrated to dryness to give a food preservative. The food preservative can be produced as a concentrated and dried material with an extremely low content of chlorophyll from a food preservative comprising bamboo grasses as a raw material which has been considered to have low utility because of high content of chlorophyll.
