PURPOSE:To prepare a MENTAIKO (walleye pollack roes seasoned with pepper and salt)-containing noodle free from the fishy smell of the MENTAIKO without crushing the roe of the MENTAIKO by mixing heated granular MENTAIKO with the noodle in a scattering state. CONSTITUTION:MENTAIKO is boiled or baked, divided into each roe, subjected to a seasoning treatment and subsequently mixed with a flower for a noodle dough in an amount of approximately 1-12% to provide a MENTAIKO- containing noodle. |
