Method of quality control of meat products, in particular fish meat, relating to the presence of worms. The product to be quality-controlled, or a sample thereof, is exposed to electromagnetic radiation in the range 800 to 1800 nm, and the radiation transmitted through the product or the sample as a result of this irradiation is analysed in order to identify the characteristic absorption of worms in the product or the sample.
