PURPOSE:To enable to brew a fermented solution used for aromatic drinks, fermented seasonings, etc., by culturing a new microorganism belonging to Candida.odorifera having an ability to produce aromatic ingredients having excellent smell-masking activity. CONSTITUTION:A new Candida.odorifera 58-3 (FERM 10902) strain having an ability to produce a large amount of aromatic components having excellent different smell-masking activities, a mutant thereof or a transformed strain thereof is inoculated into and cultured in a medium containing a saccharization solution of rice, corn, etc., for seasonings, or containing a juice of orange, grape, etc., or a vegetable juice of carrot, cabbage, etc., for aromatic drinks in a range acceptable as foods. The prepared cultured solution is centrifuged to obtain a bacteria-free cultured solution as a fermented solution, thereby providing a fermented solution capable of being utilized for cooking foods requiring an aromatic smell or the masking of a different smell and for foods having the characteristics. |
