PURPOSE:To obtain the subject new cyclodextrin synthetase excellent in heat resistance and capable of use in a high temperature condition by culturing a specified bacterium having cyclodextrin synthesizing ability and collecting the subject synthetase from the cultured material. CONSTITUTION:A new cyclodextrin-synthesizing bacterium belonging to a new strain Bacillus autolyticus and having the properties mentioned below is cultured to produce the new cyclodextrin synthetase and the produced synthetase is collected. The collected new cyclodextrin synthetase has an action on substrates such as soluble starch, potato starch, rice powder, corn starch, flour and amylose. And when the synthetase is acted on soluble starch at 70 deg.C and pH5, alpha, beta and gamma cyclodextrins are produced so that the ratio of beta-cyclodextrin may be >=50wt.%. The above-mentioned synthetase is stable at pH5-10, has the optimum pH5-7, is stable to 70 deg.C and has the optimum temperature 50-70 deg.C. |
