PURPOSE:To readily obtain the subject endo-form inulinase having a high endo- form activity and useful for production of inulooligosuccharides at a low cost by culturing a fungus and treating inulinase produced in a culture medium with a cation-exchanging material. CONSTITUTION:A fungus such as Penicillum perpurogenum var rubrisclerotium (FERMP-8705) is cultured to produce inulinase in a culture medium. After sterilization of the cultured material by filtration, the filtrate is then adjusted to about pH3-5 and treated with an ion-exchange material (e.g. SP Sephadex) to adsorb one of endo-form inulinase and exo-form inulinase on the ion-exchange material for separation thereof. Thereby the objective inulinase having a high endo-form activity can be readily obtained and, by enzymatic decomposition of inulin using the obtained endo-form inulinase, inulooligosuccharides excellent in promotion of health, etc., are efficiently produced without increase of fructose. |
