PURPOSE:To sustain a long appreciation period of tasty meat pickled in MISO (paste made of fermented soybean, used for preparing soup), by pickling meat in the MISO using sheets of wafer paper placed between both. CONSTITUTION:MISO 2 is put in a container 1 to about half thereof and chicken (M) is directly wrapped in sheets of wafer paper 3 or wrapped in a gauze 4 and then laced on the MISO 2. The MISO 2 is then filled from above and preserved in a refrigerator, etc. The sheets of wafer paper are dissolved by moisture in the MISO and meat and a transparent liquid film is formed between the meat and the MISO to slow down absorption of the MISO components in the meat. Thereby the excess pickling can be prevented to sustain a long appreciation period of the meat. |
