PURPOSE:To prepare a large amount of corn tortilla having corrugated surface by kneading corn flour containing gelatinized or roasted corn flour with water, drawing, punching and drying the pastry and frying the product in an oil in a state sandwiched between a pair of metal meshes. CONSTITUTION:The objective corn tortilla suitable as a fast food can be prepared in large quantities by adding 100-130 pts.wt. of water to 100 pts.wt. of corn flour containing 60-40 pts.wt. of gelatinized corn flour or 100-50 pts.wt. of roasted corn flour. kneading, drawing and punching the mixture, drying the punched product at 80-150 deg.C for 5-10min and frying in ay oil at 170-200 deg.C for 0.5-1min in a state sandwiched between a pair of metal meshes having a width of 5-10mm. |
