PRODUCTION OF THICK MALT SYRUP CONTAINING HARDLY DIGESTIBLE POLYSACCHARIDE

PURPOSE:To obtain in high efficiency the title thick malt syrup of improved tastiness containing hardly digestible polysaccharide of high molecular weight by making saccharification-type amylase act on roasted dextrin produced by roasting starch. CONSTITUTION:An aqueous solution of roasted dextrin prepared by roasting starch in the presence of an inorganic acid (e.g. hydrochloric acid) is neutralized, and saccharification-type amylase is made to act on the resultant aqueous solution to effect saccharification into hardly digestible polysaccharide and digestible saccharide, thus obtaining the objective thick malt syrup. Furthermore, it is preferable that the resultant saccharified syrup be purified.
