PURPOSE:To enable sanitary and safe preservation of a fruit in a 'raw' state for a long period by treating a cut fruit with an aqueous solution of an organic acid, replacing gases in the interior of fruit tissues with N2 gas and subsequently carrying our packaging with N2 gas replacement. CONSTITUTION:A fruit is washed, skinned, cut and then treated with an aqueous solution of an organic acid (e.g. ascorbic acid) at pH <=3.0 to reduce the pH of the fruit surface. Gases in fruit tissues are then replaced with N2 gas and further treated with the aqueous solution of the organic acid. The resultant fruit, together with a gaseous carbon dioxide absorbent and a disoxidizer, is contained in a container having oxygen gas barrier properties and subjected to packaging with N2 gas replacement. Thereby, freshness is maintained and preserved without sterilizing the cut fruit by boiling or dipping the cut fruit in sugar. |
