The press mould for making the food block is intended to receive the pieces of fish meat to be compressed and agglomerated. It comprises a press-mould body 10 and a press-mould lid 30 fitted into the body and a core 22 with a section whose contour is the general shape of a flattened ellipse in order to hollow out the block and the core 22 is fixed in a removable manner in contact with the bottom of the press-mould body via an end of generally rounded shape of the elliptical cross section with the aid of screws 26 which are accessible from the outside. Application to the reconstitution to the original shape of the meat of noble fish such as the salmon. |
