Pieces of raw meat are processed by running in a preservation agent mechanically after cutting them up, such an agent being also injected. They are cut up into complete sections of tissue, the different types of which are sepd. from each other and delivered along a prodn. track to a number of intermediate vessels. From these they are extracted for individual processing by injection of a preservation agent to make them tender, and also by rubbing it in. Vegetables and additives are delivered to them before delivery to a collector vessel for temporary storage. The separate sections are then mixed together and heat-treated to form a solid item such as a ham.
