<p>Mushrooms are evacuated and hydrated in a passage of inverted-U shape, whose arms are at least partly filled with water, while a vacuum is maintained in the portion connecting them. The mushrooms are fed in via one arm and discharged from the other. Water is delivered in the upwards direction into the first arm, while in the portion connecting it to the second arm means are provided to regulate the time spent by the mushrooms in it, typically a low-speed conveyor.</p> |
