PURPOSE:To provide a highly fragrant perfume composition having caramel-like, fruity fragrance and aroma effective for sweetness, containing a 3- hydroxypyran-2-one. CONSTITUTION:The objective perfume composition containing ca.0.001-10.0 (pref. ca.0.02-5.0)wt.% of a 3-hydroxypyran-2 one of formula II which can be prepared by thermal decomposition of e.g. a compound of formula I (mucic acid) in the presence of potassium hydrogensulfate. This composition is useful as a perfume material for foods, cosmetics and indoor fragrant agents. |
