[Also in Division A2] The compounds of the invention are pyridine and pyrazine derivatives having the following general formulµ wherein, when n=0, R represents an alkyl group or an acyl group; when n=1, R represents an alkyl group having at least 2 carbon atoms or an acyl group; and, when n=2, R represents an alkyl group having at least 2 carbon atoms or a furfuryl group; wherein n=0, 1 or 2, R 1 represents a hydrogen atom, an alkyl group, an acyl group or a furfuryl group, and R 2 represents a hydrogen atom or a methyl group, provided that when n = 0 then R 1 and R 2 cannot both be a hydrogen atom or a methyl group; and wherein R represents a hydrogen atom, an alkyl group, an acyl group or a furfuryl group. All the above compounds have been found to possess useful properties as flavouring agents for foodstuffs. Examples describe the preparation of 2-methylthio-pyridine, 2-ethylthio-pyridine, (pyridyl - 2) - thiol acetate, 2 - (pyridyl- 2) - ethyl - ethyl sulphide, (pyridyl - 2)- methyl - ethyl sulphide, (pyridyl - 2) - methanethiol acetate, according to Formula (I); 2 - methylpyrazinyl - 3, - 5 and - 6 furfuryl sulphide (mixture), pyrazinyl methyl mercaptan, pyrazinylmethyl - methyl, and - ethyl sulphides, pyrazinylmethyl - furfuryl sulphide, pyrazinylmethylthiol acetate, 2 - pyrazinylethyl mercaptan, 2 - pyrazinylethyl - methyl, -ethyl and -furfuryl sulphides, and 2-pyrazinylethylthiol acetate according to Formula (II); and 2,3 - Dimethyl - 3 - mercapto - pyrazine, 2,5 - Dimethyl - 3 - methylthio, - 3 - ethylthio, -3-furfurylthio and -3-acetylthio pyrazines, according to Formula (III). |
