Protease (I) are used in the extraction and purificn. of ferritin (II) from biological materials. (II) is extracted from animal (esp. bovine) spleen in the presence of (I), which is papain, Maxatase, alkaline protease, fungal protease, neutral protease, Optimase, 'HT Proteolytic', gelatinase, trypsin, alpha-chymotrypsin or Pronase P. USE/ADVANTAGE - (II) is useful for treating iron deficiency disorders. (I) degrade contaminating proteins without affecting (II), giving increased yields of (II) with higher purity and better solubility (reduced dimer content) and facilitating concn. of (II) by ultrafiltration.
