PURPOSE: To provide a beverage which contains a vehicle for a drink containing milk protein, a beverage base containing coffee and the like, a small amt. of κ-carrageenan, and a small amt. of chelating agent for cation including specified components and which shows physical stability and can be served as it is since the beverage is heat-treated. CONSTITUTION: This beverage contains a beverage vehicle comprising a milk containing milk protein or a mixture of milk, a beverage base such as a coffee powder including coffee or tea, a small amt. of κ-carrageenan, and a chelating agent for cation containing specified components. It is required that the chelating agent for cation contains 0.005 to 0.25% sodium alginate and/or glycol alginate. This drink can be homogenized, for example, under 250 to 320 bar pressure range before or after heat treatment. Homogenization is carried out at 55 to 85 deg.C, preferably 60 to 70 deg.C. When the beverage is aspetically packaged in a can or glass bottle, it can be stored in a good state at room temp. for a long period as about 5 to 12 months. |
