The invention concerns the method of acquirement of defective mutants in the quantity, activity or characteristics of enzymes in the citric acid cycle as well as strains of S. cerevisiae CCY 22-15-15 and S. cerevisiae 22-15-16 signifying a deficiency in the activity of the complex 2-oxoglutarate dehydrogenase. The selection of such mutants is based on the inability of their cells to grow on unfermented sources of carbon and energy, excluding ethanol, as well as on the increased ability of their colonies to reduce the pH of the surrounding environment as a result of excess production of organic acids.
