PURPOSE:To obtain a flavor capable of imparting mellow flavor of a fruit to dairy products, confectioneries, soft drinks, etc., by addition thereto by reacting fats and oils and fusel oil with a lipase. CONSTITUTION:Fats and oils (preferably a treated substance prepared by treating thereof with a lipase) and fusel oil are reacted with a lipase in an amount of preferably 0.05-5% (based on the fats and oils) to afford the objective flavor. Furthermore, the aforementioned reaction is preferably carried out at 20-50 deg.C for 5-40hr. After completing the reaction, the lipase, as necessary, is inactivated. |
