PURPOSE: To store food in a long period without adding artificial components by introducing meat in a movable cooking casing so as to pressurize, heat- cooking it by a heat exchange and cooling it. CONSTITUTION: For example, poultry is introduced to a movable cooking casing 10, the casing 10 is sealed. Then air and steam are introduced from a sterilized air filter 18 to pressurize to 0 to 4 atmospheric pressure, and a temperature is raised to not less than 60 deg.C by a plate heat exchange 22 to heat for 20 to 30 minutes while circulating stock upward from the bottom of the casing 10. Just after then, the circulated stock is cooled by the heat exchange 22 to cool the poultry to be not more than 15 deg.C for within 45 minutes. Next it is desirable that the stock from the casing 10 is discharged, that the casing 10 is cut off from connection in a pressurized state and that the surface is purification- processed to process the poultry. |
