PURPOSE:To improve physical characteristics, taste and flavor of rice by bringing polished rice washed with cold water into contact with cold hydrous ethanol and drying the polished rice in a lowvacuum condition. CONSTITUTION:1 pt.wt. polished rice is mixed with 1-5 pts.wt. cold water, washed at <=20 deg.C for <=5 minutes, rice bran and water-insoluble impurities are removed and the washed rice is dehydrated to give washed rice having 15-16% water content. Then 1 pt.wt. of the washed rice is mixed with 0.5-5 pts.wt. cold hydrous ethanol having 30-80wt.% ethanol concentration, contacted at <=20 deg.C for 30 seconds to 10 minutes to remove a bran oil and then vacuum- dried under 600-20mmHg lowvacuum condition at <=10 deg.C. |
