PURPOSE:To improve texture, viscosity, restoration and appearance of gelatinized process material of grains by steaming or boiling ground grains and/or processed material of grains under a specific condition under pressure and drying. CONSTITUTION:30-50wt.% ground grains having <=1mm particle diameter and/or processed material of grains prepared by blending the ground grains with starch, chemical seasoning, etc., is mixed with water to give slurry. Then the slurry is fed to a pressure steaming or boiling device, gelatinized by pressurizing steaming or boiling under 20-100kg/cm<2> static gauge pressure at 100-180 deg.C for 2-10 minutes and is dried by rapidly reducing the pressure to atmospheric pressure. |
