The filtered liq. protein concentrate obtd. by heating the milk at 55 deg.C and comprising 22-28% dry material and 70-80% protein, is further heated in 2 stages to 110-140 deg.C for 15-20 mins. The dry content is adjusted to 22-28%. The process is carried out in the specified equipment by direct and indirect heat transfer at 4 bars.
