A process and equipment for continuous production of trianglular shapes of dough is described in which the triangles are cut from a continuous band of rolled dough. Special features of the process are (i) production of equilateral triangles; (ii) the base sides of the triangles form a continuous straight line along the dough band; (iii) in a separating stage the triangles are accelerated to provide a constant space between them; (iv) in an alignment zone the triangles are rotated such that one side is at right angles to the direction of movement; (v) alignment is achieved by a turning moment induced by a number of round section belts (vi) the speed of the individual belts increases from the edge to the centre. USE/ADVANTAGE - Production of triangular dough shapes, particularly for croissant triangles. Equilateral triangles only require a 30 deg. rotation for correct alignment. Automatic alignment of triangles can be achieved.
