<p>Dough strands pass to a knife shaft with offset longitudinal knives adapted to the shape of the grooves feeding the strands, together with wipers to remove the cut strands and a cam control to lift the frame and knock the cut dough off. The cutting edges of a knife set are held variably spaced from the grooved drum passing the dough in and lie in a plane between the prepared-for-cutting and the cut-ended levels. This plane passes through the centre of the grooved drum and the respective knife holder, and a shaft and cam outside this plane control and dough removal process.</p> |
