PURPOSE:To obtain an ang-khak bread, containing an ang-khak (an extract with a solvent) prepared in the form of KOJI (yeast) using a processed wheat flour substance as a culture medium, excellent in compatibility with wheat flour which is a principal raw material for bread and capable of providing a large bread volume without sagging a bread dough. CONSTITUTION:The objective bread containing an ang-khak prepared in the form of KOJI by using a processed wheat flour substance, such as extruded and puffed substance, hot-pressed in an extruder as a culture medium and/or an extract thereof with a solvent. |
