PURPOSE:To obtain liquefied grain capable of recovering a solid product of low deterioration extent and high added value and of obtaining fermentable saccharide in high yield by liquefying grain using a liquefying enzyme under specified heating conditions to facilitate the solid-liquid separation after the liquefaction and saccharification. CONSTITUTION:Grain is heated and liquefied in the presence of a liquefying enzyme such as alpha-amylase normally under such heating conditions as to simultaneously satisfying the relationships theta>67 and t>2, respectively [(t) is heating time (min); theta is heating temperature ( deg.C)]. It is preferable that the amount of the enzyme to be added is 1-50 units per g of the grain (e.g. raw rice) and the amount of the grain to be charged 100-1000kg per kl of feed water. |
