PRODUCTION OF WINE (SAKE)

PURPOSE:To industrially and advantageously obtain an elegant wine (SAKE) free from peculiar offensive odor by extracting a pigmental material contained in specific sweet potatoes ('Yamakawa-san-murasaki') using water and alcohol and fermenting the resultant residual refuse as the raw material. CONSTITUTION:The pigmental material contained is extracted from 'Yamakawa-san-murasaki' (a kind of sweet potato) or its improved grade using water and alcohol or a mixture of the both. The resultant residual refuse is used as the raw material for fermentation to obtain the objective wine (SAKE). In the extraction of the pigmental material, it is preferable that a mineral or organic acid be added to the extraction liquid to adjust the pH value to a point when the raw material sweet potatoes and the extraction liquid are intimately mixed so as to fall at or below 4.0.
