A process for extracting the concentrated gymnemate from gymnema sylvestre which is comprising the steps of sterilizing a dried gymnema sylvestre folium with heated nitrogen, extracting said gmynema sylvestre folium with buffer solution, removing fat ingredients with an organic solvent lighter than water and removing chlorophyl with an organic solvent heavier than water.
