<p>The drainage plate is used in the manufacture of soft cheeses; the latter, in moulds or special cheese-drainage vessels, are placed on the plate during the period in which the curdled milk loses its whey. The plate consists of a flat iron frame with feet at each corner, the base of the plate being made of a sheet of relatively thin metal; it is covered with a drainage sheet, pref. of perforated plastic material, which passes under transverse wires which keep it in position so that the plate can be turned over. During the drainage period, the whey from the cheeses traverses the drainage sheet and flows to the cutoff corners of the plate; it then flows along the internal walls of the feet and descends to the lower plate, where it is collected. The flow of the whey is more rational and the whole assembly can be cleaned in one operation. The plates, with the cheeses in position, can be immersed in brine for salting process.</p> |
