PURPOSE:To obtain the title food excellent in flavor etc., by putting the leaves or stems of 'wasabi' (Japanese horseradish) to a specific treatment to prepare an extract with 'wasabi' flavor without causing its loss or deterioration and by adding the extract to a food material. CONSTITUTION:The leaves or stems of 'wasabi' are put to steam treatment to deactivate the enzyme contained into a paste or powder; alternatively, said leaves or stems are frozen and ground followed by addition of n-hexane and water to sufficiently produce spicy taste followed by extraction with n-hexane, or the above resultant ground product is subjected to water extraction while holding at <=0 deg.C and the resulting liquid is freeze-concentrated. Thereby, an extract with 'wasabi' flavor can be prepared without loss or deterioration. The extract is then added to and mixed with a food material (e.g. raw horseradish paste) to obtain the objective food. |
