PRODUCTION OF SUGAR-TRANSFERRING REACTION PRODUCT

PURPOSE:To make possible to specifically bonding sugar with hydroxyl group different from beta-galactosidase by using galactanase produced with Aspergillus niger as a catalyst. CONSTITUTION:A sample of polysaccharide containing soybean arabinogalactan as principal ingredient is reacted with acceptor raw material such as primary alcohol, diols, glycerol (derivative), sugaralcohol or catechol in the presence of galactanase produced by Aspergillus niger as a catalyst at pH4-5 and at 20-50 deg.C to afford a sugar-transferring reaction product composed of galactosyl derivative or galactoligosyl derivative expressed by the formula (G1 and G2 are galactose residue; A is acceptor molecule containing hydroxyl group; n is 0-10 and bonding between the same galactose residues is beta-1,4 bonding).
