发明名称 PREPARATION OF LACTIC FERMENTATION FOOD
摘要 PURPOSE:To shorten the necessary fermentation time and to increase the number of live cells in a food prepared by lactic fermentation with bifidobacterium and/or lactobacillus by adding separated soybean protein as a bacterium proliferation promoter to the culture medium. CONSTITUTION:Bifidobacterium and/or lactobacillus are inoculaled and cultured in a medium composed mainly of milk and the obtained cultured product is processed at need to obtain a lactic fermentation food. In the above process, separated soybean protein is added to the medium. The medium may be further incorporated with arbitrary other proliferation promoting substance within a range not to deteriorate the excellent action of the separated soybean protein. Especially, the addition of a small amount of yeast extract is most preferable provided that the addition does not cause adverse effect to the taste and flavor of the product. Preferably, the amount of the yeast extract is about 0.01-0.1wt.% and that of the separated soybean protein is about 0.1-5.0wt.% based on the milk medium.
