The invention relates to a process for preserving alive aquatic animals such as fish, crustaceans and shellfish without immersion. This preserving process is carried out in a series of steps: a/ the absolute pressure around the animal is lowered to a value of between 4.5 and 8 millibar, b/ atmospheric pressure is reestablished around the animal, c/ the animals are placed into a wrapping which is provided with an opening, and d/ this opening is covered by means of a silicone elastomeric membrane, and the whole is subsequently kept at 0 DEG C. The aquatic animals are preserved alive for at least two weeks and can then return to normal activity.
