PURPOSE:To obtain the subject KAMABOKO free from reduction in quality, preventing penetration and multiplication of microorganism, softening and deterioration by packing KAMABOKO with board and subjecting part from the under surface of board to bent part to treatment to prevent penetration of trafficable microorganisms. CONSTITUTION:Ground fish meat, etc., is placed on a board, cooked, the whole paste is packed in such a way that the bent part is positioned on the under surface of board and part from the under surface of the board to the bent part is treated so as to prevent penetration of trafficable microorganisms having cilium to give the objective KAMABOKO. Heat treatment, closing treatment or chemical treatment is preferably carried out as the treatment to prevent the microorganisms from penetrating. |
