An installation for producing malt from cereals comprises a rotary kiln, a chamber located below the rotary kiln and a chamber located above the rotary kiln. The kiln and the two chambers are coaxial. A partitioning system is arranged inside the rotary kiln. The installation is improved by arranging fixed radial partitions in the rotary kiln which divide it into germination regions, an air-drying region and a kiln-drying region. Sealing elements are associated with the partitions in the rotary kiln and/or the partitions in the upper chamber. The rotary kiln is set in motion periodically so that the partitions in the rotary kiln are aligned with the partitions in the lower chamber and with the partitions in the upper chamber and co-operate with the latter by means of the sealing elements. The inlet spaces in the lower chamber, the regions of the rotary kiln and the oulet spaces of the upper chamber are therefore designed to form separate channels for the flow of germination air, the drying air and the kiln-drying air through the installation.
