Flour ready for bread making is produced by adding salt and salt-binding agent, pref. fine breadcrumbs (2-10%) to mixt. of rye flour (pref. type 815; 60%) wheat flour (pref. type 812; 40%) and ready-made yeast. Addn. of salt-binding agent enables ready-salted flour to be stored in silos for unlimited periods without detriment to taste of bread made from it. |
