摘要 <p>PURPOSE:To obtain spicy wine in a state having completely deodorized and mellowly ripened flavor in a short time by roughly filtering raw juice of fresh weed of Houttuynia cordata, subjecting to oxidizing treatment and subjecting to alcoholic fermentation. CONSTITUTION:Fresh weed of Houttuynia cordata is washed, cut, crushed and pressed (squeezed) to prepare raw juice of weed of Houttuynia cordata. Then, resultant raw juice is subjected to rough filtration using suitable filter, etc. Next, oxygen gas is blown into the roughly filtered juice solution and oxidizer such as ammonium persulfate is added to perform reaction, or oxidizing treatment is performed by jointly using said ammonium persulfate, etc. Thus, sugar such as cane sugar and yeast for fermentation such as dry yeast for wine preparation are added to the deodorized juice solution of weed of Houttuynia cordata finished of oxidizing and ripening and resultant solution is subjected to alcoholic fermentation. Otherwise, decocted solution of dried weed of Houttuynia cordata is jointly used to obtain a product having good taste of milder and no peculiarity. By said method, a product immediately after finish of fermentation has similar ripened feeling as a product ripened by preserving for a long period of time and able to be immediately shipped.</p>
