PURPOSE:To obtain performances equal to a cooking sterilizer of hot water type at low cost of facilities and low utility cost by making air exist in a retort, continuously sucking air remaining at the bottom of the retort, introducing the air to the top of the retort and recycling. CONSTITUTION:Foods packed with a soft packaging material are stored in a retort 1, steam is sent to the retort 1, air is made to coexist in the retort 1 and the foods are cooked and sterilized by the stream and air. In the operation, the bottom and the top of the retort 1 are connected by a communicating channel 12. By a blower 14 laid in the communicating channel 12, air remaining at the bottom of the retort 1 is sucked in the communicating channel 12, introduced to the top of the retort 1 and recycled. Consequently, performances equal to cooking sterilizer of hot water type can be obtained at lower cost of facilities and utility cost than the cooking sterilizer of hot water type. |
