Homogeneous mixture of dehydrated potato flakes and other constituents is prepd. by a process in which the potato flakes are introduced into a suitable mixer, during the resulting agitation a fatty food such as butter, is introduced in the liq. state so that flakes become coated. Other constituents, such as powdered milk, salt and seasonings can be added in the mixer, according to the type of prod. desired, so that these materials stick to the treated potato flakes. The process avoids the difficulties arising with conventional mixtures, the taste and the nutritional value are both improved. An antioxidant, such as 2,6-di-t butyl-p-cresol, may be added to the butter. The latter acts as an adhesion agent and prevents any sepn. of pulverulent materials from the potato flakes during subsequent handling and storage. The texture of the material reconstituted by the addn. of hot water is better than that obtd. with the conventional prod. made from powdered materials. |
