PURPOSE: To provide oil improving the property of preservation for a long time by performing the temperature extraction of chopped natural truffe in vegetable oil, diffusing air from a sealed chamber, in which fresh truffe is placed, and next performing rapid heating and rapid cooling. CONSTITUTION: A natural truffe 6 is chopped, put into a filter 7 and hot-dip extracted in vegetable oil 4 such as sunflower oil while being stirred by a stirrer 2. On the other hand, a non-treated natural fresh truffe 14 is put into a sealed chamber 13, its sealing air is diffused from a pump 15 through a guide pipe 12 to the vegetable oil 4, next, the truffe 6 is drained and the vegetable oil 4 is rapidly heated and rapidly cooled to the environmental temperature later so that the target oil can be provided. |
