N-acetyl-3-(3,4-dimethoxyphenyl)alanine is converted by the enzymatic action of an acylase from Aspergillus oryzae to 3-(3,4-dimethoxyphenyl)-L-alanine, leaving as an unreacted byproduct N-acetyl-3-(3,4-dimethoxyphenyl)-D-alanine. The process is preferably carried out in the presence of ammonia to adjust the pH to the desired value within the range of 6.0 to 9.0, and in the presence of cobaltous ions in a concentration of 10<->4 to 5 x 10<->2 M. 3-(3,4-Dimethoxyphenyl)-L-alanine is converted to 3-(3,4-dihydroxyphenyl)-L-alanine by cleavage of the ether groups.
