PURPOSE:To obtain a CGTase having excellent pH optimum suitability and temperature resistance characteristics by cutting a DNA capable of coding the CGTase derived from Bacillus Nos. 38-2 and 17-1 and repairing resultant DNA. CONSTITUTION:A cyclodextrin glucanotransferase(CGTase) expressed by the formula (A is S<1> or U<1>; B is S<2> or U<2>; C is S<3> or U<3>; D is S<4> or U<4>; A-B-C-D is not S<1>-S<2>-S<3>-S<4> or U<1>-U<2>-U<3>-U<4>) when the 1st to 260th residues of an amino acid sequence in cyclodextrin glucanotransferase 38-2 are expressed by S<1>; the 261st to 439th residues thereof are expressed by S<2>; the 440th to 536th residues thereof are expressed by S<3> and the 537th to 712nd residues thereof are expressed by S<4> and the 1st to 260th residues of an amino acid sequence in cyclodextrin glucanotransferase 17-1 are expressed by U<1>; the 261st to 439th residues thereof are expressed by U<2>; the 440th to 536th residues thereof are expressed by U<2> and the 537th to 713rd residues thereof are expressed by U<4>. |
